Charmat Method sparkling steps:

Charmat fermentation starts at low temperature and low foaming. Splitting from fermentation lees in racking vat. Cold decanting, microfiltration followed by isobaric bottling

Colour: pale yellow gold with sparkling glints
Nose: typical Moscato aromatic fresh and lively perfumed aromas
Palate: fairly sweet, smooth though not mouth flattering. Reminiscences of peach and citrus fruits
Perlage: outstandingly fine and persistent perlàge

Gastronomic couplings
